
We are in week two of a four week lockdown and this weekend I am finding the light in all of the new recipes I can make. I was asked yesterday by my friend Karen if I had a healthy Easter recipe that she could make. Due to our current walnut glut and the time at home, I have created some little morsels that are quite pleasant. You can roll these balls into egg shapes with the kids to suit the occasion perfectly…you could even coat them in dark chocolate..and make a little nest for them too #homeschool..think egg cartons, tin foil, little baskets…
You will need:
1 cup walnuts
1 cup almond meal
1/4 cup cacao powder
12x dates
2T Rice Malt Syrup (or other syrup sweetener such as pure maple syrup or honey)
1 t vanilla paste or extract
Pinch sea salt.
Desiccated coconut for rolling or dark chocolate for coating
To make:
Blend all ingredients in a food processor til you have a fine sticky crumb then roll into balls (or Easter eggs). Roll in coconut or melted chocolate. Store in the refrigerator.
I can confirm that these are a dream for adults too…paired with a cup of hot coffee..
