The Christmas festivities in our household have well and truely begun after decorating our tree, inhaling the pine smell like it’s my job and Maggie standing guard to protect it from Fletcher like it’s her job. We spent the weekend listening to carols, decorating and we took the kids down to the Nelson Santa parade where they had clowns handing out mandarins to the children! There were still lollies and traditional treats but the kids were happy that they got a mandarin and Dad was super stoaked to come away with the hard boiled sweets (eyes rolling).
Those of you who know me will know that we love to treat all of the wonderful people in our lives with edible gifts all year round, but these balls have been made to treat our friends and family especially for christmas this year. I am absolutely loving that both of my children are at an age now that they can both help me in the kitchen and both of them had great joy in rolling these.
You will need:
1/2 cup pumpkin seeds (preferably activated)
1 cup sunflower seeds (preferably activated)
1/2 cup almonds (preferably activated)
3/4 cup dessicated coconut (+ and extra 1/4 cup or so for rolling the balls in) I use the trade aid brand, it’s beautiful and fresh
1/4 cup heavily compacted soaked dates
2 T rice malt syrup (or other liquid sweetener)
2 T raw cacao (we use the little bare brand)
2 T goji berries
1/2 t vanilla extract OR 1/2 t peppermint oil
1/4 t himilayan sea salt
1 T coconut oil, melted
Place the first 4 ingredients in the blender and whizz until you have a course sand-like crumb (can be a little chunkier if you like).
Add the rest of the ingredients and blend until the mixture can be rolled into a ball. Depending on your blender, you may need to stop a few times and scrape the mixture from the sides.
Roll into teaspoon-sized balls in coconut and store in the fridge. Wrap in cellophane for gifting or gift in glass jars.
