Real Fruit Ice Cream

Nothing says summer in NZ more than real fruit ice cream.. This is one of my favourite past times in Nelson and one I wanted to share with my little ones, just without the vanilla ice cream (dairy, sugar, stabilizers, gums, emulsifiers and all).  For those of you readers that have never experimented with frozen bananas as an ice-cream base before prepare to be blown away with the texture, taste and EASE in making this little kiwi fav.  I will have to admit too, this has been a frequent summer breaky in our house the last few weeks in a bowl topped with some homemade raw granola/just an assortment of chopped seeds, nuts, coconut flakes and/or fruit..

The following quantities makes a food processor bowl about 3/4 full so is plenty for our family of 4 (and usually for seconds), you can easily halve if you are making for just you and your little one.

you will need: 4 frozen bananas (i keep a whole heap in a container in the fridge which have been peeled and frozen), 1/2 cup frozen berries of your choice, 1/4 cup of coconut water (or water works fine too). For a more ‘creamy’ ice cream you could use coconut cream or coconut yoghurt in place of the coconut water.

To make:Blend all ingredients in the food processor for about 3 minutes, you will need to stop half way through this time to scrape down the sides of the bowl.  Scoop or pipe into a tub and enjoy.

So close to the real thing you will have to make it to believe it
