Raw Chocolate Avocado Mousse

There are so many benefits to including raw foods in the diet and what better time for upping the raw food than summer time…

2016 has started off amazingly for us and due to purely enjoying every gorgeous moment of this summer with my little ones, blogging has taken a back seat for me for the past couple of months and I feel so at peace with that.  Simmering away however has been so many ideas and now they have come to a boil and I feel like I want to explode with all of the recipes I have to share with you. On the internet I have found so many variations of an avocado chocolate mousse and in the past I have come up with a few myself. For me, this one hit the ball out of the park. I can assure you it is well and truly tried and tested 😉

For each serving you will need:

1 small ripe and creamy avocado, 1 heaped tsp raw cacao (we use our own ‘little bare’ brand), 1 heaped tsp coconut sugar, 1 tsp coconut oil melted (we use ‘lav kokonas’ virgin organic coconut oil from the Nelson market)

To Make: put all ingredients in a mini food processor and blend until smooth and creamy. (taste and if you need adjust cacao and coconut sugar to taste). Spoon or pipe into a ramekin and sit and enjoy your moment together with your child and this nourishing raw goodness.
