At long last. An easy peasy paleo savoury muffin recipe that won’t break the budget and actually tastes delish!
Today I made bacon and leek, but any classic savoury flavours would work – corn, chives, onion, chorizo, tomato, rosemary…whatever you like!
Gluten, dairy, refined sugar free, paleo.
1 cup almond meal
1/2 cup tapioca flour
1 tsp baking soda
1/4 cup coconut oil or butter, melted
Seasoning (I used 1/2 tsp of turmeric powder, paprika and salt)
4 – 5 rashers of bacon
1/2 cup leek
(optional) 1/2 cup grated tasty cheddar cheese
Preheat oven to 160 degrees.
1. Cook bacon in the oven until crispy and leek in a small fry pan on a medium heat with olive oil and a little water to soften / prevent burning.
2. Whisk eggs well, then gently fold in remaining ingredients including bacon and leek (and cheese if using).
3. Pour into muffin pans greased with coconut oil or patty cases and cook for 20 – 25 minutes.
