While scrolling through my Instagram news feed just now I learned that it is national nut day today…so I thought it was only appropriate that I post a nutty bliss ball recipe.
In our house we loooooove bliss balls. It has become a ritual to make them with Maggie. She sits on the kitchen bench and I measure out the ingredients as she tips them in the bowl. Her hands are plunging in the bowl several times during the whole process and once the rolling is complete, we have both eaten our fair share in mixture (taste testing is a must when roughly measuring and trialing different super food ingredients). This is what gives bliss balls their name for me. My bliss is watching Maggie scoff the mixture in pure joy as she adds the word “bliss” and “balls” to her ever increasing vocabulary.
I was given a 2.3kg bucket of Pics crunchy peanut butter last week so the nut butter I used tonight was this. We are lucky enough that Maggie doesn’t have an allergy to peanuts but if you or your little one do then just substitute the peanut butter for any other natural nut butter you desire. I will probably use other nut butters in the future but hey, I gotta get through 2.3kg somehow…..
SNICKERS BAR BLISS BALLS….fruit free…
1 cup gluten free oats, 1 cup ground almonds, 1/4 cup cacao, 1/2 tsp cinnamon, 1 tsp organic vanilla essence, 2/3 cup pics crunchy peanut butter (or any other nut butter), 2 Tbsp Rice malt syrup, 2-3 Tbsp little bare coconut cream, desiccated coconut for rolling.
In one bowl mix oats, almonds, cacao and cinnamon. In another bowl mix nut butter, rice malt syrup and vanilla. Blend the wet in to the dry with your hands adding coconut cream to ease blending. Roll in desiccated coconut and refrigerate.
