I have been on an egg free / paleo baking mission this week (as well as being gluten, dairy and refined sugar free without being absolutely loaded with natural sweeteners and still tasting great!). After a bit of head scratching and experimenting, these cookies fit the bill perfectly and really hit the spot.
Gluten, dairy, refined sugar and egg free, paleo.
1 3/4 cups almond meal
1/2 tsp baking soda
1 tsp gelatine
Pinch of salt
2 Tbs melted coconut oil
2 Tbs honey
1 Tbs coconut cream
1 tsp vanilla extract (read the label to ensure it is sugar free)
2 Tbs raw cacao
Preheat oven to 170 degrees
1. Process all ingredients in a food processor until dough forms a ball.
2. If you have time to refrigerate for 30 mins, great. You can roll it into a log and refridgerate, then cut slices off for round cookies or alternatively roll out to about 6mm between two sheets of baking paper and cut with cookie cutters. It will still work if you don’t refrigerate, but be a bit trickier to work with.
3. Bake for 10 – 12 minutes or until cookies can easily be removed from the baking paper (just before browning stage!).
4. Allow to cool and enjoy with your favourite cuppa.
